Full and round with scents of tropical fruit and lemongrass, the 2019 Sauvignon Blanc vintage from Chamonix is one for the books! Pale straw in colour with greenish highlights, the wine offers exquisite aromas of lemon and lime. The palate is pleasant, showing typical tropical and green fig flavours supported by a lively acidity and minerality. Refreshing and lingering, Charmonix Sauvignon Blanc will pair well with oyster, a shrimp cocktail or anything fishy.
The grapes used in the 2019 vintage of Chamonix Sauvignon Blanc come two vineyard sites covering 5 hectares. The 18 year old vines are planted at a density of 5000 vines per hectare and trained in the Cordon method. After picking, the grapes are soft-crushed and chilled over night and fermented in stainless steel tanks for 20 days. The wine spent roughly 16 weeks on the lees in tanks, after which it is fined, filtered and bottled.
Head-winemaker at the wine estate, Neil Bruwer, says the aim with the Chamonix Sauvignon Blanc was to maximise the varietal expression in terms of depth of flavour. Yields vary between four and six tons per hectare, meagre when compared to the rest of the Cape’s Sauvignon Blanc vineyard. His objective is to make every bunch of fruit harvested count by bringing its full potential to the fore.
