This vibrant pinotage from the wine estate in Franschhoek has a deep ruby colour with notes of dark violet when enjoyed when the wine is still young. The bouquet is complex with scents recalling wild berries, spice and cherries. On the palate, the wine shows full body and rich dark chocolate with fruit flavours, balanced elegantly by tannins, with a long and lingering finish that reveals a sweetness reminiscent of liquorice.
The Chamonix Greywacke Pinotage 2017 is produced from vines that have an average age of 15 years old The vines are trained in the traditional Cordon system. Whole bunches of the grapes harvested at the beginning of the harvest are sorted and fermented in stainless steel tanks with carbonic maceration. This winemaking technique is applied primarily to medium-bodied red wines to make them fruitier and to soften the tannins. After malolactic fermentation, the wine was aged for 18 months in 228L French oak barrels. 30% of which are new wood.
