Tokara Reserve Collection

Background: The premium wines produced from the winery, Tokara, are named the Reserve Collection range. The wines are made from site specific vineyards (on both their Elgin and Stellenbosch properties) which were selected by using the specialised NDVI process This process captures both visible and infrared light emitted from the vineyards, thus creating a colour index of variances between specific vineyard blocks. Viticulturist, Aiden Morton, describes this as “a kind of terroir spec wish list” and so through this exercise ideal sites were selected specifically for their Reserve Collection range. The grapes for the Reserve Collection Elgin Sauvignon Blanc (including 2% Semillon) were hand-picked on Tokara’s Highland farm in Elgin, before being transported in refrigerated trucks back to the winery at Stellenbosch. Fermentation at 15 degrees Celsius took place in stainless steel tanks using selected wine yeasts. Once fermentation was complete the wine was left on its lees for five months giving the wine its lovely round rich texture.
Result: The result is a full flavoured wine with newly cut grass, tropical fruit and asparagus aromas, which follows easily onto a silky palate with delicious Sauvignon freshness and a lingering aftertaste.

Drink with what: We enjoyed the wine on its own and with various foods including salads, and one evening last week with a creamy seafood pasta – it was perfect!
