Background: Back in 1818, Nicolas François Billecart and Elisabeth Salmon founded Billecart-Salmon.  Since then, the small family owned House has been committed to continue the family tradition by abiding to their oath: ‘Give priority to quality, strive for excellence’. Their entire range will delight bubbly lovers who enjoy purity and ripeness of fruit in their Champagnes, yet also want them to be able to age well. The essence of the Billecart-Salmon style has always been its meticulous production from the double debourbage(cleansing of the must) through to its use of its own cultured yeasts to its long, slow and very cool fermentation. The Blanc de Blancs is produced from five selected Grand Cru Chardonnay vineyards and is blended from two different years that reveal the special quality of Chardonnay. 

Result:  The wine offers a fine mousse with a tinge of gold colour. Intense aromas of dry fruits along with hints of almonds and hazelnuts follow through to a creamy buttery mousse sensation on the palate with a fresh and elegant finish.
