Billecart-Salmon Brut Reserve NV

champagneWinery Location: Mareuil-Sur-Ay, France

Chief Winemaker: Francois Domi

Background: Back in 1818, Nicolas François Billecart and Elisabeth Salmon founded Billecart-Salmon. Since then, the small family owned House has been committed to continue the family tradition by abiding to their oath: “Give priority to quality, strive for excellence.”

Their entire range will delight bubbly lovers who enjoy purity and ripeness of fruit in their Champagnes, yet also want them to be able to age well. The essence of the Billecart-Salmon style has always been its meticulous production from the double debourbage (cleansing of the must) through to its use of its own cultured yeasts to its long, slow and very cool fermentation.

The popular Brut Reserve is a blend of Pinot Noir, Chardonnay and Pinot Meunier from three different years, sourced from selected vineyards in the Champagne region.

Result:  The wine offers beautiful elegance with gentle, ripe apple fruit with a soft, cushiony mousse.
