Winemaker: Callan Williams
Background: Dancer, music and wine lover, Callan Williams, hung up her ballet shoes and opted for vellies and farming instead and after a stint at Elsenberg she now has her own successful wine producing business, The Garajeest. This delightful 20 something says “wine making is a way of expressing a fascination with life, vines and verse which inspired the concepts ‘lyrics and legends’”.
Callan produces two wines, a Semillon called Jim, and a Cabernet Franc named Bruce (these names refer to her favourite musicians leaving you to guess who!!). Both wines are beautifully made but being partial to Semillon I have bought a few bottles of Jim (Morrison??). This 100% Semillon was grown on cool climate vineyards in Elgin and after they were picked at optimal ripeness fermentation took place with half the fruit in older wooden barrels and the remaining in stainless steel tank. After fermentation and prior to bottling the wine matured in 2nd and 3rd fill barrel for 7 months.
Result: Full-bodied with aromas of baked apple and spice and hints of lanolin leading to vanilla on the tail.

Drink with what: We enjoyed it with Kingklip served with a grilled prawn and white wine sauce
