Background: The Unfiltered collection from Fleur du Cap is a range of premium wines often considered as benchmarks in the industry. Cellarmaster Andrea Freeborough (SA Women Wine maker of the Year 2010) is responsible for the overall production of the wines with the assistance of Pieter Badenhorst who takes care of making the white wines, while Bennie Liebenberg oversees the vineyards.
The grapes for the Sauvignon Blanc are sourced from the Elgin and Darling regions which benefit from both the mild climate and on shore sea breezes. This allows for maximum concentration from slow ripening. Once fermentation is completed the wine is left on the lees and later bottled without filtration.
Result: The wine shows lovely balance with classic aromas of gooseberries and asparagus with hints of granadilla. The palate follows with rich and bold tropical fruit flavours with a distinct minerally finish.
When to drink: now until 2018
Drink with what: Perfect on its own but will also enhance the enjoyment of fresh asparagus, seafood salad and sushi, especially salmon roses!
