Background: The Pinot Noir and Chardonnay grapes for this third release were grown on Quoin Rock’s vineyards in Cape Aghullas. Here, the vines benefit from the ocean’s influence close by that provide the cool onshore winds and the perfect amount of rain making irrigation unnecessary. Once at the cellar, the base wine was fermented for three weeks in old French oak barrels and then spent 12 months on the lees prior to second fermentation in the bottle. After the second fermentation, the wine was left on the lees for a further 12 months which imparts the luxurious richness of the wine.
Result: Refined, elegant and rich, this is a bubbly for those who prefer their Brut minerally and dry.
When to drink: Now until 2018
Drink with what: Perfect on its own but we also enjoyed it with a deliciously rich crayfish thermidor!
